InterContinental Hong Kong Gourmet Banquet Menu

In celebration of its 70th Anniversary, global luxury hotel brand, InterContinental Hotels & Resorts recently conducted the first InterContinental Michelin Insider Road Show in China. The InterContinental Marseille Michelin-starred Restaurant Chef Lionel Levy and InterContinental Amstel Amsterdam Michelin-starred Restaurant Chef Rogér Rassin were joined by 15 other InterContinental Insider Chefs in the Greater China Region for this tour which started at InterContinental Beijing Sanlitun, stopped at InterContinental Shanghai Expo and ended at InterContinental Shenzhen – giving guests a taste of the InterContinental Life through a visual culinary feast.

Chefs Lionel Levy and Rogér Rassin were also involved in personally guiding each InterContinental Insider Chef in Greater China in the design of a special menu for local patrons and gourmets to enjoy.

InterContinental Hong Kong's Insider Chef Kenny Tsang, who is the hotel's Banqueting Chef, joined the culinary event at InterContinental Shenzhen. In collaboration with InterContinental's European Michelin chefs, he has created an exclusive Banquet Menu which is now available for Events from November 1, 2016 – February 28, 2017.

This culinary exchange between InterContinental's European based Michelin chefs, Lionel Lever from InterContinental Marseilles and Roger Rassin from InterContinental Amstel Amsterdam and InterContinental chefs in the Greater China region is an example of how InterContinental® Hotels & Resorts bring new culinary experiences to life in local markets. By showcasing the finest cuisine from around the globe, using the best ingredients, imbued with ancient traditions and modern ingenuity, our international Insider Chefs help our guests “Live the InterContinental Life” through delightful feasts for all the senses.

Participating hotels include InterContinental Shenzhen, Kunming, Shanghai Pudong, Shanghai EXPO, NECC, Tangshan, Puxi, Suzhou, Nanjing, Bejing Beichen, Changsha and Hong Kong.

InterContinental Hong Kong is renowned as a destination for exceptional dining, with five outstanding restaurants, including two with Michelin stars – the 2 Michelin star Yan Toh Heen (recognised for its exquisite Cantonese cuisine) and  the 1-Michelin star SPOON by Alain Ducasse (showcasing contemporary French cuisine). 

The hotel's Events Team  already offers  exclusive Wedding Banquet options featuring Yan Toh Heen Chef Lau Yiu Fai's 2-Michelin star Cantonese dishes and celebrity chef Nobu Matsuhisa's innovative NOBU new style Japanese cuisine.

Now with the InterContinental Michelin Insider Chef Endorsed Menus, InterContinental Hong Kong's Events Team is pleased to offer an exclusive new menu by Banquet Chef Kenny Tsang, the hotel's Insider Chef.

Kenny has created a gourmet 5-course Western menu, in collaboration with and endorsement by InterContinental Europe-based Michelin Insider Chefs Lionel Lever from InterContinental Marseilles and Rogér Rassin from InterContinental Amstel Amsterdam.

The exclusive new gourmet menu is available for private dinners for up to 100 guests in the hotel's harbourview function rooms from November 1, 2016 – February 28, 2017.

Kenny Tsang, InterContinental Insider Chef - InterContinental Hong Kong

Kenny joined InterContinental Hong Kong in 2014 as the Banquet Chef.  Prior to that, he spent four years at the Hong Kong Jockey Club and was part of the opening team at the Hyatt Regency Hong Kong Hotel.  He first started off his career at the Mandarin Oriental Hong Kong Hotel where he worked in the main kitchen.

Lionel Levy, InterContinental Insider Chef - InterContinental Marseille - Hotel-Dieu

Lionel Levy is the Insider Chef of the InterContinental Marseille - Hotel-Dieu. He oversees all culinary operations for the hotel - its bar and the two restaurants (one: a brasserie; the other, a fine-dining venue).

Rightfully seen as the leader of the new Mediterranean cuisine, Lionel Levy learned his trade from internationally acclaimed chefs such as Éric Fréchon and Alain Ducasse. After moving to Marseille in 1999, the city has become his adopted home. It is here that he has gained mastery of the local cuisine – leading to Michelin stars for Alcyone.  Lionel is inventive, inquisitive and always eager to discover new recipes. His menus notably showcase local, seasonal produce with a selection of freshly-caught fish from the Vieux-Port, vegetables grown locally by the best farmers and meat from butchers who take pride in what they do.

As one of InterContinental Hotels and Resorts' Insider Chefs, Lionel Levy says: “Our wish is to offer your taste buds a gastronomic trip, crammed with emotion and overflowing with the flavours and spices of the Mediterranean”.

Rogér Rassin, InterContinental Insider Chef -InterContinental Amstel Amsterdam Hotel

Rogér Rassin is the Insider Chef of the InterContinental Amstel Amsterdam Hotel. He was born in Maastricht, in the south-east region of the Netherlands. Inspired by the training and devotion of his grandfather, he studied cookery and seasonal gastronomy.

He worked at La Rive restaurant at the InterContinental Amstel Amsterdam Hotel for 3 years from 1993-1996. At only 29 years old, he was invited to be the Head Chef of the new restaurant – Restaurant Cordial - that was to be opened at the Hotel De Weverij in Oss in 1998. This was his first position as Head Chef. He designed the menus from scratch. In 2002, the restaurant was awarded a Michelin Star. He directed Restaurant Cordial for 10 years.

In May 2008, Rogér Rassin returned to La Rive as the Executive Chef where he has maintained its Michelin Stars. In 2013, he was awarded the title of SVH Master Chef, the highest possible culinary honour in Holland.

The ambition for another Michelin star will always be there, but his main goal is to continually raise the culinary standards of the hotel, refining the dishes they serve in La Rive whilst creating exciting new ones.
